In the case of an apocalypse, what value would gold have? Would it be a completely worthless yellow metal, or an insurance once currency comes back?

Who knows how long it will be till things bounce back if ever? Your priorities should be water, food, guns, ammo, and shelter. Those things will be way more valuable than gold.

this. you can pretty much spend the rest of your days finding those gold vaults when you have food and water.
its been a barta tool for centuries and has properties of interest to industry and medicine
it will always have a value to someone and the fact that it does not tarnish sustains that value

The first few years, it would be worthless but once settlements begin to appear, it is reasonable to assume that something will have to be used as a currency.

During the blockade of Leningrad when people were engaging in cannibalism and eating wallpaper you could still exchange jewelry for food, albeit for shitty raits. So to answer your questions, it would still have a lot of values.
Source: stories told by a family who survived it only because they exchanged gold and really expensive furniture for food.

Investment value = zero. Even in your conditions.
Also.. gold is almost everywhere, you just have to search a bit, is not like something really hard to find, the only problem is, the mines and gold explorations are heavy regulated and controlled by governments and various entity's. Current exchange is basically, and agreement between various big dudes, and how cheap o sell it.
In Serbia, the gold was often the very first thing to be traded away. It had very little long term value, and was worth very little overall. Useful things like guns, ammo, food, alcohol, lighters, and other practical things will found the basis of the post-disaster economy.
t. A prepper.
