I want to make my own pay site. I cater to a certain porn fetish, and I have hundreds of original pictures and a few videos, with the potential to get thousands more along with some more videos.
I'd like to charge people to view my site and original content, but I have no experience making websites or buying domains. My questions are:

Lost Cost
buy a domain + hosting. install wordpress. install woocommerce or memberpress depending on how you want to run it. pirate a theme. configure everything yourself.
it's going to take you maybe a month and look like shit unless you put in the time to master web development, copy writing, design, graphics, etc. you'll be struggling a lot with any tiny error that blocks your road.
Minimal Work
pay a professional. a pro can do it in several hours because they've done it hundreds of times before.
you can't have both unless you hire cheap labor. but ask yourself would you fuck a $5 whore? drive a $500 car? live in a $10,000 house? don't skimp on your business because you get what you pay for. my advice is stay away from anyone non-native english speaking.

its entirely up to you. it's not like rolling a dice where you have 1/6 chance to win. there's a myriad of things you can do to improve your chance of winning to 99%.
in the end, remember it's not as easy as just putting a website on the internet and getting sales. you need a marketing campaign or nobody will know about your website.

I have 2 websites.
Designing the site yourself is not a good idea. It's challenging and complex. Especially a pay site.
You need to ask around and find a web developer (prefferably local) who can build the site for you and set up the pay system.
Expect to spend $1k - $2k for a decent site.
You can find an Indian online to build it for like $300 but it will be a dysfunctional piece of shit.
