If bitcoin is supposedly "the next generation currency that will replace fiat", then why do vendors immediately convert to dollars upon receiving payment?

They don't though. My business accepts bitcoin and keeps it all as bitcoin, some of it is used to buy servers and advertising.

i havent converted my poloniex BTC profits to fiat yet..
They have been a source of entertainment for me, playing pump n dump games. I will prolly never convert them, since i get bored without them

It'll depend on the price of BTC whether or not they convert it to fiat, it's an investment like anything else.
If BTC suddenly skyrockets of course they're gonna cash it out
