There's a bare minimum that games require to store textures, etc. If you're under that, the game won't run at all or will have to use system memory, which would make it run very slow.
Also the higher the resolution you want to game on, the more memory is required.

Btw switching off Antialiasing will give a good FPS boost and you'll probably not see those edges anyway during gameplay.

Also switch off VSync. It's just something to avoid screen tearing at high FPS, but it's actually bad if your framerate is low.

In The Witcher 3 I sit at about 50-60 at the absolute lowest settings, in PUBG I get about the same with the lowest settings. It's not a bad card, I just would like to be able to have over 60fps without using the lowest settings.

Set your games to high quality. If it doesn't make much of a difference FPS wise, it might just be the CPU. Most games are heavily GPU bound nowadays, though.

The most I'll throw at it in terms of gaming is minecraft.

I just thought it was amazing in terms of specs.

I'll be using it mostly for running vm's, maybe some light 4k video editing.

You won't be gaming in 4K with a 1050ti. I have one and it's good, but 1080p is what you will be gaming at.

Also laptops are bad for gaming in general. Expect the battery to be empty after less than two hours and lots of thermal throttling (meaning it will slow to a halt all the fucking time because video games create lots of heat and it doesn't want to catch fire). You're much better of getting a superb desktop that's much faster than a PS4 Pro for a thousand bucks.

I need the portability, as it will be my work horse.

Well I guess it will be ok. Just expect it to become pretty hot during big workloads (e.g. 4K video editing). I don't really know about good cooling options for high performance laptops. I'm more of a desktop guy.
