We don't really hang ours anymore, we did once upon a time but worked out we don't really need to. The meat works does hang them though.

Fresh meat does not have the same flavor and is not as tender but there are a few cuts you can have fresh. Not saying its bad, just no where near as good. The best is cry vac'd and aged for a few weeks in a fridge, never frozen.

Im the only one that cleans properly in our restaurant. The chefs re-label food, so to extend its USE BY date, commonly do this with the prawns and chicken as it's expensive and the head chef wants his bonus. They drop things on the floor and pick them back up to cook with, they commonly use raw meat tongs for salad etc.

I work as a food safety consultant to restaurants. Fast food places have their problems are much much cleaner than say family restaurants, buffets, diners, bars, hotel kitchens, etc.

For instance, I work with a quick serve mexican chain that is usually pretty good, although an uncaring or bad manager will fuck any restaurant up. I would never eat at a certain family restaurant chain that we work with; the employees and mangers dgaf about anything unless they're being audited because they're so overworked.

Well aged and unfrozen meat tastes the way it does because the complex protein chains have begun breaking down (tenderization) but the cell walls remain intact. Freezing beef causes the water in the cell's cytoplasm to crystallize which will then expand and rupture the cell walls/membranes.

So the tissue structure gets altered and tasty cytoplasmic contents seep out during cooking. That's why as you pull out meat from your freezer it's noticeably less red becoming grey.

Tldr It's a chemical reaction thing that does alter the taste and texture and removes some of the tasty stuff inside.
