Because the moon is always orbiting on its orbital plane. It's always tilted in the same direction. There are two places in the earth's orbit where the earth, moon and sun align, so one blocks the light reaching the other. We can have either a lunar eclipse during this time (if the moon is full) or a solar eclipse (if it is a new moon). This happens twice a year (because the orbital planes align every six months).

The fact that the moon does the same thing over and over again every month, every year, gives it done predictability, meaning we can know what day it will happen, and which part of the earth will be facing the moon at that point.

Bouyancy only works with gravity or centripetal force. And with the flat earth model, if it were left up to centripetal force to do the job, we'd literally be flying off like the olives on the pizza from some post earlier.
