A 70 ton plane is able to fly because of lift created by air and the speed of which it is passing underneath the wings and body and is directed by flaps.
The same way a 70 ton boat can float on top of water with ease because of buoyancy. The air within the hull creates a stable system.

A rocket is able to go to orbit using: L = Cl * A * .5 * r * V^2
Lift = coefficient * Density * Velocity squared / 2 * Wing area

The coefficient is tested experimentally; such a weather, shape of the rocket, air conditions, etc
That's why there's always a nominal flight condition for each launch.
