I like my steaks rare, but burgers are best medium I think. Toppings can vary but grilled onions and some good mustard are my favorites. Lettuce and tomato are good too.

otherwise, burgers always need at least tomato and onion. the vegetable acid is needed to cut through the fat and heavy caramelized meat flavours.

mayo, ketchup, and pickles are welcome but depending on whatever else you add they might not be necessary. hot sauce, but not that god awful vinegar, super-sour hot sauce, will also work well. vinegary mustard likewise is a retarded thing to add and only those with dead tastebuds would consider adding something so acid to a hamburger.

if you're going to fry a hamburger, add two or three teaspoons of sesame oil. it rounds out the flavour really well.

the best leafy green to add to a hamburger is boston lettuce. don't add romaine, don't add iceberg. they literally just taste bitter and add nothing to the hamburger's flavour profile; overall it will distract from the flavours you want to emphasize and won't balance the fat you have in abundance.

There's this restaurant in Oslo im fucking in love with, called "Nighthawk Diner". A better burger is hard to find in all of scandinavia.
Perfectly made, fries are great, and nice amount of vegetables.

Plus their shakes are out of this world

The bacon relish is simple as well. I just chop up some streaky back bacon, fry it with some olive oil, brown sugar, freshly chopped tomato and a little white onion. Simmer the shit out of it till its nicely reduced and take off heat. I prefer to serve it cold but it's just as good hot. I find the cold makes it more palatable when the burger is straight of the grill.

When you have a steak it's fine to cook medium, medium well, etc, because it's a whole piece of meat, but burgers are ground meat, all mixed together, laced with e. Coli and by not thoroughly cooking each bit of the beef that may have been contaminated, you're risking getting sick.
