oh forgot to mention CAD modeling. It's in demand in countless industries. It's truly not that hard to learn to do the more basic stuff in a week or so. Companies are looking for people who can do that stuff but aren't willing to hire a full time employee. That leaves room for a consultant.

At a university you can likely get a version of Auto CAD or Inventor for free.

Spend a couple hours a week making stuff for a company and make an easy paycheck. It will also fatten up your resume.
