Tacos al pastor are the best when fresh and hot.

HOWEVER, I've found that when ordering extra from a Mexican food place with the intention of leftovers, chicken tastes better the next day.

Al Pastor has an excellent taste when fresh, and is the best meat. It gets stringy and tough when cold. If you're a lazy motherfucker and want some cold tacos the next morning, make those tacos chicken.
