It can still be a date if she pays. Technically she is the one that suggest going to the bar so the onus is on her to pay anyone (in proper etiquette the inviter covers the invitee, doesn't seem too common though).

For what it is worth the first time I went out with my wife it was a similar situation (worked together, I was leaving so when she asked me out I accepted).

I suppose so, it is hard to say because everyone is different but if you feel like texting then text.
I didn't give much of a fuck when dating because I never had much interest in getting a gf so I just texted and called whenever I felt like it.
As long as you are not one of those people who texts multiple times before getting a response it should be fine.
