Do I need to ground this power supply? (It's for an audio amplifier)
If yes, can I do it to the chassis of a speaker, or should I use a power cable with an earth prong on it?

Figured I might do it on the metal housing of the speaker?
The power supply is taking US power (120v 15-20amps) and down stepping to 12v 3a. Don't know how much that matters in this decision.

Unless the speaker is on a metal chasis that is grounded, you're not grounding shit by doing that.
It's not required, but highly recommended. Otherwise, it will probably have noise and pick up weird shit nearby. Considering you're stepping from 120 volts to 12, I would do it without even thinking twice; it will probably have 60 hz buzz unless you do.
