Whatever shit they're serving right now in NY is traditional, or innovative. Restaurants here are always coming up with new and strange combinations, it's reflected in our media. New York has historically been a city of migrants largely due to Ellis Island, so these migrants brought their own food culture with them (Russian, German, Italian) and consequently they became the modern recipes derived from previous dishes. I don't think burgers were even American, it was originally german in origin. American pizza was alienated from classic pizza found in Italy, but that doesn't mean the two food cultures didn't mingle to some greater or lesser degree. Have you actually tried some of our food? During the 1930s we had a prohibition where alcohol was banned. With the removal of alcohol restaurants started losing money so they couldn't keep employees. Employee pay went down. They started "selling" alcohol under the counter and in order to get the waiter to get you it, you had to "tip" money. The purpose of the tip was to give money to the waiter and to pay for the illegal goods.

Sadly, this never went away and businesses found ways to pay waiters less. They arn't mandatory recipients of minimum wage laws.

It's fucked up, but its how it works here.
