It's a 2 month process to make the mead. You first make the "must" which is just honey (12 lb since I'm making 5 gallons worth) and water (1 gallon worth). Then you add 3 gallons of water to the air tight container (this is for 5 gallons worth of mead). Stir in the must and water, pitch the yeast. close it up and let it set for 1 a month. Then you rack it and put it in a glass carboy for another month and you are pretty much good to go. That's the basics of it.

You can get the cider at any store. You can use it in place of the water. Just make sure there are no preservatives in the cider, otherwise your yeast will not be able to do it's job at all and you will have 5 gallons of unfermentable honey water.

Yeah, with cider out of season, then the store is the best option. I asked because I usually make hard cider. That's why I asked if it needs to be fresh or already fermented, but after I made the post I felt like an idiot.

I assume the cider also alters the sugar levels of the brew. Does this make the mead a higher alcohol content with cider than using only water? If so, does that change the amount of yeast that needs to be added?
