G1 provides you with a great tier list and overview of everyone but it is 19, 3 hour shows and nobody expects you to watch that much. So the last 3 shows are probably the way to go.

Also catch the G1 USA Special since that's their attempt at broadening their appeal to the US more.

Gonna respectfully disagree with this and say, try both commentaries and see which you like more. The English commentary is useful because it gets you familiarized with who the characters are and what their stories are.

The Japanese commentary brings incredible energy, but I wound up liking Kelly and Callis.

If you don't have unlimited amounts of time just start with Wrestle Kingdom 11 from January 2017, and watch all the major PPVs in chronological order up until the current time. Watch the G1 matches then. Also don't listen to the people telling you to watch in Japanese. You'll want to watch in English to learn the wrestlers, storylines, etc. Once you know your stuff then you could watch in Japanese because they're pretty entertaining.
