It's not original, but in Rocky Mountain Pro I saw a tables match where you need to break 5 tables on your opponent instead of only one in order to win, that was good.
They also had a non-sanctioned match that was actually non-sanctioned since they weren't any referees and the wrestlers themselves did the count, that was awesome too

Ultimate Dildo Submission Match

Regular match, but dildos are legal weapons and must be worked into the opponent's anus at least 3 inches for a winner to be declared.

Revolving Team
Team match but only a single pair of wrestlers are in the ring at any single time. After a set amount of time, between 3 and 5 minutes, the wrestlers switch with their partner. Once a person is pinned/submitted, the remaining wrestler has to take on the other team in a handicapped match, but with the same rules, only a single wrestler in the ring with him for a set amount of time.
