What would be the advantages to having a guide dog when I am not blind?

The guide dog will safely lead you to the tendie aisle and back to your basement while you shitpost on your phone, never looking up except to grab the tendie box from the freezer.

Extremely calm and well trained dog that still knows to alert you of shit among other useful skills
I have schizophrenia I've been thinking about getting one of those emotional support dogs. Do they have to wear that vest all the time though? I don't want the world knowing I'm a mentally weirdo.

They can wear vests that say "I'm a working dog, please do not pet me" instead of "Emotional support animal."

You could always lie like an ass and say it's to alert you about seizures

Emotional support dogs aren't the same as service dogs. Emotional support dogs don't get public access rights.
That said, neither is required to wear any specific gear. But if you are looking to get a service dog, a vest that says it's a service dog, "do not pet" etc. is helpful to make sure people won't distract the dog. You don't have to answer anyone when they ask what your service dog is for, either. They are not entitled to an answer.
