Get a goldfish.
Last time I checked years ago, monsterfishkeepers forum had some people who build some really cool indoor ponds. Not the biggest but big enough for about three, or just had some large goldfish.
It's possible but prepare for it to cost. Koi get very large and need the space. They can live in tanks but you'll be spending a pretty penny to find one big enough or you can build your own. I'm talking 200+ gallons here. A small tank will just kill them quickly. Koi and goldfish can live 30+ years.
There are also plenty of beautiful goldfish you can look into instead. Most can also grow large but they sound more up your alley.

Actual koi would require you somehow fit a 500+ gallon body of water in your office.
Koi colored comet goldfish (shubunkin) would still need a minimum 4 foot long tank.
Koi colored fantail goldfish would need a 30 gallon tank for one or two.
Koi swordtails would need a 2 foot long tank (15 or 20).
A koi betta could go in a five gallon.
A mix of a couple rili shrimp and a couple carbon rili shrimp could be kept in something as small as a gallon.
All of those being very bare minimum sizes.
