Honestly, I skip shampoo and just use an oatmeal conditioner. Still gets the dirt off without stripping my boy's coat or making his skin dry out.

I use the Espree brand. you can dilute it until it's practically water (literally 16 parts water to 1 part shampoo, which makes it last years) and it lathers up quite well. They also have a conditioner, if you're worried about skin/coat drying out, but we've actually come quite a long way with dog shampoos and most of them are specifically formulated to prevent overdrying of the skin. As long as you're not washing your dog every day, you'll be fine.
The one I have is pic related, but they have others. It was just what was available in a physical store when I bought it. They even have shampoo specifically for cleaning up skunk spray. Neat.
