I'm trying to do some guided meditation and whenever he tells me to notice my breaths I start breathing manually. How do I fix that?

concentration is like a muscle, it needs exercise, so just keep doing it, that's all there is to that issue.

It will pass.
Focus on breathing, sound and touch, breath consciously and apply focus to the present and you will find that you can simply notice your autonomous breathing rather than being hyper aware of it.
do it long enough to relax again. your breath will automatically return to normal after a while. you can't get too little oxigen or hyperventilate for too long comfortably. the point is to learn to get back to the relaxed and observing state easier with time. keep trying.

Make your concentration finer. So instead of feeling the entirety of the inside of your nostrils (or wherever you feel your breath best), choose an increasingly smaller area or point.
If it makes sense to you, it helps me to "look away" mentally, so that the breath is literally on the periphery of my "mental vision", as if I was looking away from something but still noticing it.
