How can I explain an alternate viewpoint to someone who's set in their position and enjoys being so?
In this specific instance I'm trying to relay the idea that people with certain mental disorders (developmental disorders, schizophrenia, psychosis being examples) may not always have full control over their emotions or enough faculties to make informed, thought out decisions.

And thus you cannot. Some people are set in their ways and you can't and shouldn't really push them to change, no matter how much you push it will just reinforce it to them. You can take them to the water, you can explain how important the water is to them and life in general, you can even show them proof that the water is clean or whatever. Can't ever make them drink. Well, maybe if you had a gun and the horse understood the concept of a gun, not to mention the concept of an ultimatum.
There's your answer- either use a gun (in which case it wouldn't be an actual acceptance of your view but just a false one, hence not actual) or accept it won't happen.
