Yes, they can check their traffic.
Yes, they care about your privacy. They also care if they're getting copyright infringement notices and might revoke your access for that.
If you're concerned that your activities might raise a red flag in their system, consider purchasing a vpn to use or discontinuing those activities altogether.

Do file sharers ever get caught? Do they ever get sent cease and desist letters, or get in trouble with their ISPs, or get slapped with fines? (Yes.) Then your university probably cares somewhat. That doesn't mean you WILL get caught, but if they receive a copyright infringement notice as the guy above me said, then you'll probably get in hot water with them. It happened to me at my university, I was an idiot, but they let me off with a warning.

You're using their WiFi, and quite possibly you'll have to install some of their software onto your computer in order to connect, "for your protection" (e.g. SafeConnect). Yes, they COULD check if they wanted; they also almost certainly have a privacy policy that stipulates that they WON'T check unless they have good reason to do so. It no doubt also states that you waive any expectation of privacy the second you do anything illegal.

Don't look at child porn - fucking obviously. I recommend you refrain from pirating music/movies/software too, but if you have to, at least be smart about it. Don't do what I did and download 15 seasons of an anime all in one go. But no, you don't have to worry about somebody in a dark room somewhere chuckling to themselves at page after page of incest porn in your browser history.

At my uni ports are blocked. I've never been able to VPN out, including using another uni's VPN servers for totally legit purposes. IT will not help at all: they want shit absolutely locked down.
Bonus: I'm not a student but faculty, and I don't even get admin privileges to my desktop in my office. I therefore have never used that machine, which now sits under my desk to make room for my personal laptop.
