I've been in a relationship for roughly three years. I got into an argument with my girlfriend just now (she's traveling, so over Skype) and we had this agreement to lay off certain topics because I tend to need a longer time to reflect on things. She broke that agreement, and kept pushing it, without even apologizing. Is it warranted that I ignore her until she apologizes?

No. Stop acting like a child. Explain to her that she broke the deal and you are upset about that. She may not view it as a big deal but you do. If she's not apologetic or remorseful after that, you need to think about the type of person she is and if you're ok with that type of person or if you need to move on.
