Honestly, if the person means as much to you as you want to say they do, they'll know it.
Write what you feel about them. Tell them what you really wish for them.
If they've been a good friend to you write that. If they helped you a lot mention that. If you care about them a lot tell them. If you wish to be close to them in the future say it. You know, be honest and mean what you say.
No matter what you write it will still sound somewhat generic, because there's only so many positive things you can feel or write and all of them have been repeated over and over. But what's important is that it's your real thoughts and feelings, not just a quote you copied from somewhere and the person you're giving it to should be able to realize and appreciate it.
