>How do I become a more confident person?
I went from 270+ pounds to 160. I consider myself well maintained, and live a healthy lifestyle. I go to the gym nearly every day. However, socially, I feel only slightly less awkward then before. I have a hard time thinking of how others see me, and my appearance to other people means a lot to me. I've never had a girlfriend, and I feel I've never learned the social skills required to even communicate properly around women I'm even moderately attracted to. I've been described as a very nice person but just kinda shy. Are there any tips for improving my self confidence?
Only way to get more confident is to expose yourself to social interaction. Just start talking to people. It will be awkward but eventually will get easier. As for women do not go strait for a romantic relationship right away. Just try and make some female friends at first.

That seems to be the consensus answer i see. I need to learn how to just talk to people.

First I have to applaud you for that. You've proven you've got the willpower to go from 270 to 160.
With that in mind, I think you've got what it takes to learn social skills, confidence and communications: discipline.
Perhaps as the first steps you could use some helps in form of opening self-improvement books like "how to make friends and influence people", "the art of seduction" and go outside force yourself to interect with people, if you're in lost remember what you've learned from self-improvement books to push on.
