And I was still off (like a dollar 50 over)
I'm so bad at this job and I can't help but think if I can't do this job I can't do anything.. My coworker said she has never been off but I'm still consistently off and I'm lucky if I'm not it seems like.

You could maybe count how many of each bill/coin you have and use a calculator to multiply each one and add those together.
As in, if you have 58 twenties and 32 tens, do 58*20 + 32*10
That way if you mess up counting one denomination, you can recount how many you have and see which one was off.
