You're not really providing enough information in your post. Did your parents insisted on calling for hours on inappropriate time? Did they wanted a full report of your day activities written sent to them every single day? It seems something normal for parents to check out their child who get abroad for somoe times until they're convinced it's all fine and dandy and not something really "invasive"

If not, then just accept the call, but politely say you're doing fine, nothing really happened to be worried about and you'd like to get to know your new habitat further.
