So I might've fucked up, maybe I'm just lonely or something but I met a girl off tinder and we agreed to see each other for the month sense we're both leaving the country, I found myself really attracted to her, not just sexually but we click on a lot of different levels. We spent the day together on Wednesday and now she keeps canceling and said won't be available until the day I fly out. Am I a fool for feeling this way so soon when I already know the outcome?

Just ask her if she is interested or not. Girls hate confrontation so they tend to dance around the subject. That's why girls many times won't flat out reject a guy. They'll say "sorry I fell asleep" or "Can't that day" instead of just stating they don't want to.
"Hey I really liked hanging out with you on Wednesday but it seems like you're not into it. If you aren't interested you can just tell me." Say this. This is only if she has canceled on you more than twice. In case you don't want to do this because you think its weird or awkward, if you continue to make plans and get canceled on that will be worse

If she cancels again cut off all contact and realize she is just using you for attention. You need to be willing to walk away from this completely
