Wait until you guys know each other well enough. Trust each other. Then sit down and talk to her about her weight. Tell her how you feel, but make sure you're reassuring and that you don't find her disgustingly unattractive or whatever, but that you can both work on your self image.

Or you can go the non confrontational route and just start asking her to go to the gym with you. Work out together.

To ask them to change everything about themselves would be one thing. But to find compromise on something? That's alright. In a relationship both parties try to change for the better. If you're not down for the confrontational route, go ahead and try to introduce it in a more casual manner. But if she asks "Do you think I'm too fat?" or whatever, be honest. Say something like "I don't think you're too fat, but I do think you'd look better if you lost a little bit of weight. I'll be willing to do the same for you." or whatever. Don't hide your feelings. You have to communicate them, unless you know it'll absolutely devastate your partner.
