>when she goes from eager and chatty to cold and barely responsive after the first date

I love her guys. What do I do with all these feels?

What makes you say she is cold and barely responsive?
people have to recharge their talk energies sometimes, you know?
She was just looking for a sucker to her dinner.

Chill out.
Text her less and actually date her more.
Texting is fine, I'm not one of those people who believes its inherently wrong or somehow ruins attraction, but you really shouldn't read into the timing or length. Sometimes I take time to respond to texts because that is a luxury you get from texting that you don't get from real life conversations. I never send short texts or take a while because I don't like the person.
Now to be fair I was thinking just like you did earlier today. I thought her not responding right away was a bad sign. So I told her she's free to not want to see me again and she said its not like that and explained how she is with texting etc. Just putting it out there. I know all the dating gurus will tell you that long response times are indicative of lack of interest, but believe me when I say that not all women are that passive and cowardly.
did you two get along during the date? maybe you were boring and she lost interest. its okay man, you can move on. dont spend the energy fretting over it. maybe ask her why outright so whatever it was that turned her off you can not make the mistake next girl
