having no clue about pay-for-porn, I'd take a guess that this varies highly between sites, and what payment options they offer.

If you join a site that accepts bitcoin payment, I'm rather sure it would be impossible to track the account back to your person if you do everything right. But that would take researching into bitcoin on your part.
There are ATMs that allow you to transfer cash money to bitcoin accounts (effectively buy bitcoins). If there aren't any security cameras around, it's probably impossible to pin that account back to your person based on that transaction.
If you then do the actual transaction to the porn site from that account through Tor (or whatever is necessary, research this) and don't do anything else through that bitcoin account, that would be pretty secure in my opinion.

That being said, since most porn sites probably only take credit card, look into pre-paid or gift cards that you don't need to register to your name and pay for with cash. Not sure if they exist.

with regards to what information you need to disclose to the site, a bit of research shows that for example registering for kink.com only requires a username, an email address and a password. If you do the registration process through tor, they have no means of finding out who did it.

get an e-mail adress with a trustworthy provider (for example protonmail.com, maybe also cock.li) with an address name that obviosly doesn't allow any pinning to your natural person (best is a random string), and use that one. username should be random too, like a hash or a dictionary word. Read mail (webmail etc) only through tor.

Like, if you're fine with *your bank* knowing that you pay 9.99$ per month to PORNHUB Corporation, USA (or whatever), then the online credit card payment system might function in a manner that suffices with you using your normal credit card (i.e. pornhub doesn't get to know what name is on the card).
