We went out twice and she told me that we can't be a couple because we are roommates... She goes on dates with other people, and so do I, but you know how it is when you think of someone all the time..

Given that she was willing to go out with you twice, it would seem to be that her excuse for not wanting to date you is not actually how she really feels.

She doesn't want to date you. She's giving you an excuse that isn't the actual truth of "I don't like you in a romantic way" probably because she's trying to spare your feelings.

Move on. If you can't do that while you're living with her, stop living with her.
