Alot of people do this. Building a little fantasy from a minor encounter. Sounds like its all you got though homie. Build a bigger relationship with someone and you might fantasize less about your brief interactions.
Good you do that though, i think. Use it as an energy to pursue something with the next one.

You need to think and keep your head cool. It's difficult but it can be done. You need to control your feelings and dismiss them when you know they are caused by something not intended to cause them, like a girl saying hello to you.
This, and experience. Eventually you'll become too worn out and become more jaded. At this point you either become a bitter loser or you keep trying while knowing to be reasonable.
I used to be the same, but just continue going on dates and you'll learn from your failures. Most of the time the problem is that you show too much interest in her and the girls think you are boring. In these days they like to be hunters too and want a challenge, so you should be mysterious and show her affection but not so much that she thinks she is the only girl for you.
This is a bit extreme and may cause you to miss out, but when it comes to girls I just assume the worse. No one could like me ever no way no how is my mindset at all times. To counter balance it so it doesn't turn into general self pity, I do admit that I can still be a great friend/brother/son/etc, just not a good bf/lover.
At least attractive girls give you attention. Not all of us get even that far
