Can you take a year out for work experience? I did a paid internship, which helped me find some direction.
Your best bet atfter graduation is to find a grad scheme that will rotate you through a few different roles.
Data skills are certainly not shrinking in demand. There's quite a variety around that subject.

I should add that I had to learn Road for my role, they don't teach that in uni but the job required a degree regardless.

I think some companies want to see genuine interest, the ability to follow through on something by actually finishing the degree.
A lot of grad positions will often train you anyway, it's easier to train someone who is used to learning and have proof they can commit to it.
