Is it normal to feel like the people I click with are never attracted

It's possible that you lose interest after all the mystery of them fades away and you find out they're just normal people instead of the saints you imagined them to be.

I'm wondering the same thing...The odds of two people falling equally much for each other just doesn't seem to be in our favour.

I'd say in most cases one of the two parties settles for the other, generally due to insecurities or social pressure. A lot of people date because it's what they're "supposed to do", many even get married for the same reason.
In my experience, at least, its worth waiting for someone who loves you as much as you love them. This is hard to find, but not impossible. Keep an open mind and an open heart.
