How am I supposed to enjoy slice of life? There are many shows of the genre that I'm really interested in but it's just too boring.
Your life is just too good, OP.
Watch only good ones, like K-On and My Neighbours the Yamadas

Half of k-on is exceedingly boring though

Try revisiting it later, then, a change in mindset might help you understand why it's so highly regarded

I said it was boring, not bad, I gave it a 9/10
space out episodes more, I can't watch more than one episode of sol at a time. Just watch it when you feel like it which may be one a day or one a week.

You do or you don't, like any genre.

Slice of life shows are actually very different from each other. Try to find the kind you'd like. K-ON is well known but isn't very representative. It lacks the calm, mellow beauty that is, for me, the most important for a slice of life show. Cute girls are just a side dish.

Try Lucky Star

You will never appreciate slice of life, until you start to work in office. Tired all day long and a good healing slice of anime is the only one you need.

find one that is about something you like, identify with or find interesting:
making games (i still haven't found one)
making anime (shirobako)
making manga (bakuman)
making music (kids on the slope)
making movies (ano natsu matteru)
agriculture (silver spoon - it's fucking great)
fishing (tsuritama)
hikikomori (watamote)
food / work (Working!!, Food Wars; devil is a part timer)
school (interview with monster girls; re:life - both great)
fatherhood (usagi drop - its fucking great)

They way I enjoy it is two episodes at a time starting at about 9:30 PM while eating a bowl of chili and rice.
You could try something similar maybe?
