How come a lot of anime series don't last more than a few seasons?
Because they are expensive to make.
It's better this way, we could have a few zombie series that go on forever with only one season of something mediocre that quickly is forgotten

Most anime are advertisements, they stop airing when the money stops coming.

Not too many are popular enough or have enough source material to last as long as Gintama or One Piece

Well that series hasn't aged well either, and dragging it is just making it worse.
Because most are advertisements for the source material and are meant to hook you into buying it to get the rest of the story.
I prefer the 13-26 episode format, you don't need 60 episodes to tell a good story.

You could ask that same question for 3d tv shows. More isn't always better. For example I think Chaika would have been better with only 1 season, I was fine with an open ending. I did enjoy season 2 but not nearly as much which brings down my over all opinion of it a little bit.
