With time stopping characters I've always gone with the explanation that they cover themselves in an aura closely shaped to their body and everything within that aura moves normally. So when they touch something, only the immediate part they're touching becomes temporarily unfronzen, and once the aura stops touching it it freezes again, allowing it to be interacted with without messing with everything else.


But of course, whether you like it or not the one true answer is that it's magic in a fictional story so it'll work however it's written. If that upsets you then so beat it (though I wonder why you only question this particular unrealistic part, and not things like how time is even stopped to begin with, or how people can manifest ghost spirits out of themselves). If you don't like it then don't watch it, but you're not going to suddenly convince people who do like it to suddenly change their mind and hate it because you "caught" the fact that something in the magical fiction wasn't realstic.
