Only idiots will say Jotaro, and they'll only say it because he wears black.

Jotaro's quiet and can get rude easily, but he's also a guy who jokes around with his friends, smiles plenty, and actively plays around and teases his enemies.

If you want edgy JoJos, the only real candidates are Giorno and Johnny. Giorno spends most of the comic lying to and manipulating most of his teammates, never tries to get to know them (though he is genuinely fond of them and is horrified and saddened at their deaths) and makes it clear he'll kill anyone who stands in the way of his dream. Johnny is similar to Giorno but without delusions of grandeur, and his friendship for Gyro is stronger than his ambition.

If you want edgy characters in general it'd obviously be shit like J.Geil and Angelo.

Here's a thought:
If there any minor fight that you would change? Keeping the general premise of it but what would do if you could rewrite it?

I was talking about it with a friend about Blue Hawaii and how to maybe change the pacing of a little better, but I don't think you can do too much. I suppose Highway Star got annoying waiting weekly for it.

Hardmode: No "Add in Fugo betrayal" or straight up removing fights or moving it to a different part of the story.
DIavolo Must Die mode: None because upon rolling over this spoiler, you've crushed a very tiny pixel Diavolo with giant letters.

Personally: I'd like to do a do-over of TH/TC. Maybe allow Talking Heads to jump between the Escort Squad to force them to have difference ractions and interactions with each other. I'd be a good way of bonding and having to work the fight out as a team instead of Giorno pulling a Giorno on it. It'd also make TH a little less of a very precise stand. Considering Bruno talks to Pesci about protecting his friends in the turtle, It'd real moment for testing their trust in each other.
It'd also be a better way of revealing Bruno's zombie state.

I'd make it clear that Notorious BIG's stand after death was a Grudge manifesting as a Stand, not particularly a Stand Power manifesting on death or something.

It's clear his stand was something different before his death, just remove all ambiguity with a phrase alongside the page like 'normally this would have been the end of their troubles, but Carne was a very... passionate man, in life...' or something to allude to what happened.

Unlike other parts in the series, Part 7 didn't have a united group working with Johnny.
So I feel that Tim and Hot Pants, while they had their own battles and agendas, could have been interesting parts of the main cast if they fought with Johnny and Gyro as a team.

She spends the vast majority of the part not talking to anyone or doing anything. Her one solo fight was something Araki openly admitted he only put in to give her something to do. Even though they aren't all that great, Enya, Mariah, Yukako, Aya and Shinobu all blow her out of the water, not to mention the girls from part 6 onwards. It's like saying your favorite male character is Avdol or something.
