Because it has a huge variety of humor. Most anime plant themselves in only one type, like slap stick, dirty jokes, referential humor, puns, absurdist or whatever but konosuba has at least a small amount of each type. So not only is there humor for everyone but it keeps one type of humor from becoming fatiguing.

It's also colorful, upbeat, expressively animated, self aware without being deprecating or defensive about it, has some real character progression and depth and doesn't waste its viewer's time.

Needs another four seasons.

Characters and world building. A hysteric set of iconic characters in a goofy world allows the writer(s) to have an unparalleled amount of flexibility.
They can put these 4 idiots in any situation and it will turn out funny.
