He has the emotional maturity of a 5-year-old and he's not getting any better. He probably spent almost all of his day posting on chan boards before getting isekai'd.

Just to play devil's advocate, the fact that he is a massive cunt is kind of endearing. The character development is clunky, but him being total trash with a messy mind and no guidance living a trash life is kind of human.

Its the fact that subaru is garbage that makes him a great MC. He isn't overpowered, he has no redeeming qualities, he isn't strong or intelligent. Hes not even a good person. Hes an incredibly flawed character that gets jealous, throws tantrums, and is full of himself, but thats what makes his story so good.

Subaru is the Shinji of isekai. A loser protagonist that somehow gets the job done is the epitome of wish fulfillment.

Emilia is just as bad, she has ruined hafu elves and her personality is garbage. Subaru only likes her because he grew up idolizing elves.

Emilia doesn't have very much character development, so she's kind of... replaceable with a cardboard cut out right now (assuming there'd be more in the future to wrap up all the loose story lines) That being said, Subaru's strange motivation towards her even though she doesn't really do much or think much of herself is interesting to think about in the first place. I'd like to think it's kind of a situation of one-way love that they'll eventually use to make Subaru suffer more, but, realistically, though, the writing is probably just so focused on Subaru that Emilia is just unnecessary.

He actually does good things though. Only a person wasn't completely irremediable would have bother trying to pay their debts to someones and actually care enough to help them out in turn.
