It was just that; a tantrum. He knew almost nothing he did would change anything but there was a very small chance it could if he created a big enough paradox that Ayala threw up its arms and erased Emiya Shirou from everything ever.

I wasn't entirely clear on it when I read the VN, but I figured there were a few sides to it:
1. He can't be certain preventing Shirou from following his path wouldn't have an effect on his status as a counter-guardian.
2. If he could prevent this instance of Shirou from becoming like him, he would have saved at least -an- Emiya Shirou from his fate.
3. If he could stop Shirou forcibly or convince him to stop he could have the satisfaction that he was mislead and that his choice was mistaken.
He wanted a way to confirm his misgivings, which is why our pure innocent cinnamon roll Shirou pissed him off so much: He demonstrates to Archer that even with what he knows now, he can't truly say he'd have done anything different, except maybe save more people and try even harder.
