I'm predicting that Norman isn't being sent off for slaughter, but rather to be held in the HQ or another plantation until he's 12 years old. Grandmother talked about the importance of the Tifari and how only Isabella can produce high quality goods, not only that but she also knows that the children are planning escape and is keeping it a secret from the demons for Isabella. Isabella probably aranged for this to happen with Grandmother, which is why there's a sudden shipment date for Norman. And since Norman isn't 12 yet, his brain isn't 100% developed and therefore not yet ripe for plucking, sending him to the HQ will not only ruin the kids escape plans but also discourage them from trying anything.

Two things that seem like they'll be important:

First, there seems to be a range limit on the trackers. Mama was genuinely scared there. She couldn't see Norman but he didn't use the device to shut off the tracker.
Either they only respond when the target is in their respective pen, or they simply have a set distance they can track and Norman cleared it when he ran along the wall.

Secondly, Norman is actually taking something with him.
Looks like a cup or maybe a periscope, but not the pen.
A dead man wouldn't walk away with a single object jangling in his suitcase.
The pen probably deciphered the last book's message, and that gave him some kind of hint on how to survive getting FLOWERED. Whatever that thing in his suitcase is, it's probably to either help him get away or help him after escaping.

Last year when I started working on my arms, there was a period of about 3-4 days where I couldn't unbend my elbows and when I did it hurt like a bitch. I would love to see the kids finding outside a society when humans and demons not only cooperate, but get along well, like they have bonds, friendships, relations, marriage, etc, and humans know the fact that the demons raise childs to eat them and not only accept it, but even encourage it.
I think it would be interesting and unnerving, and would suppose an interesting obstacle in the story for the kids to face. That the humans know the truth, but they dont give a fuck and move with their lives without problems, and that the demons get along with the humans, can see them as equal, but even then they eat them without remorse.
