I think the real reason why Goku and Vegeta never wished for immortality is because of zenkai. Their power can not be exponentially increased if they were immortal because they would never be put into a near death state. Their inability to die would also negatively affect their motivation which would degrade their power over time as they slack off on training.

This is probably why Goku Black never wished for immortality as well.

I agree that Roshi is probably just there as fanservice, and because of the time-crunch involved in finding warriors. I actually had a theory for some time that, despite that Roshi shows up in every piece of promotional art for this arc/ the scene-change cards, he won't actually be one of the final tournament fighters. I had always thought it would make way more sense for Roshi to serve as a trainer, thereby making him relevant again whilst also allowing a more qualified surprise fighter to take his place in the tournament. I am still holding out hope that this will actually be how they implement him, and that ANYBODY ELSE takes his spot in the tournament. Don't get me wrong, I don't mind seeing Roshi get involved again, but he's just so fucking old now, I really just can't see him as a warrior anymore. If they wish back his youth, that's one thing, but otherwise... man, I am gonna be so disappointed if everybody gets bodied right away, only for Goku to win the whole thing with one arm tied behind his back yet again, because that's what it seems like is about to happen. Same as above. As for Future Trunks... yeah, I don't see that happening, either. If they go forward in time to before Zen-ō wipes out Zamasu, then Zamasu would kill everyone. And if they go too far forward, Zen-ō would have already wiped out their universe, which would have automatically lost due to them not having an extra member in time... most likely killing them in the process.

I think the best candidates for a "surprise fighter" are either Shenron, Paikūhan, Bardock, or maybe even Golden Freeza (assuming he were promised new life and a rematch with Goku.)
