idk forbidden scrollery it's a bit complicated , and you need to know all the characters and what happened in the games.
But the manga it's really really interesting and fun.

They need to do stuff chronologically. Each stage in a game can be around 2 episodes.

Absolutely, FS is by far the best touhou manga. I'd prefer it if they made an anime original or something instead though.
