sato tells nagai that when an ajin gets decapitated they watch a new head grow back onto their body and theyre no longer themselves

but you see sato after he gets decapitated and hes still the same. he even has all of his memories still.

Ill probably start reading the manga soon that's what usually happens after i finish the anime

It's still Sato, the idea is that the Sato that exists now is different from the one who was decapitated, i.e. the Sato the lost his head no longer exists. It's compared to swampman in the manga.
