I have the best taste in anime. Golden Boy is the most perfect anime. In your heart, you know this is the truth. If we're not just talking perfection, but the kind of things you greentexted, then Gozenso-sama easily outstrips NGE and any other contender. Sorely underwatched Oshii OVA. Explores cinematography, animation and screenwriting of anime at a much deeper level with much greater results. And it's one anime's funniest.

I agree, many people can't notice that Evangelion is actually a finely crafted masterpiece. And I'm not talking about psychological and philosophical themes only, it's all about the direction, symbolism and parallelisms through which those ideas were delivered. Usually people just get what's said to them in two last episodes, but completely ignore deeper insights delivered through imagery. Of all anime I've watched Evangelion manages to be not only the most interesting in terms of characters, whom I absolutely love, but also in terms of exploitation of the visual medium itself. That's why EoE is so good, what's said in 25-26 aloud is hidden in imagery there. You can actually find answers to all your questions about the plot and characters if you take a closer look at exposition. Shame not everyone even tries to.

There are entire books, classes, and websites dedicated to this. And as mentioned, for film, cinematography, direction, acting, composition etc are big ones right off the bat. Its rediculous to say you cant judge these components as some of it is almosy a science at this point (how certain shots are used to convey different emotions, color use, and the like).

Litterally google 'creative writing course' in my area or 'film critic criteria' or ask this on a website dedicated to it.
