Berserk, because most adaptations have been decent, except the new one covering the Conviction and Hawk of Millenium arcs. I would start out with Golden Age and not leave anything cut (unlike 1997 and movies), then proceed to Lost Children and the other arcs. The adaptation would be a series of OVAs.

I've always wanted to see more of the Twelve Kingdoms books adapted. They started translating/publishing them in the West last I checked (many years ago). That was a lot of potential to end really quickly on a strange not after like 50 eps.
