Norman saw one of his sisters murdered by fucking demons, found out that Mom was working for said demons and that every kid there is destined to become food. He doesn't see Mom as a mother anymore, but as a monster, an enemy that will lead them to their deaths.
Plus, who knows how he'll act at the moment of actually having to do it.

I understand where you're coming from, but it wouldn't be the first time in manga where the MCs plan something unthinkable only to discover they don't have the heart to go through with it in the moment it's happening.

It's more convenient for the plot, but not for the drama.
Children are impulsive, they are not because they are geniuses.
Children are immature, they are not because they are geniuses.
Children are emotional, they are not because they are geniuses.
Children are frightened, they are not because they are geniuses.
They are objective and extremely rational. They have the charisma of a robot. Emma is the only one who can give a bit of spontaneity to the narrative. Moreover, it's like reading an essay. I hope that when they finally put the plan into practice this change.

They have to hide this from Mama, not from the reader. That's my point. The author doesn't show the emotional of them enough. The scene you mentioned was cool, but it's still too little. I hardly know anything about them. I only know their plans because explaining the plans is all they do.

Maybe. We don't know enough about how the Mamas are selected and the spots are limited. They're supposed to be very intelligent but at the same time, top children must be sacrificed to the Demons at some point.
The fact that the eldest girls help out with the babies does feel like it's a way to find out if they could be a Mama or Sister candidate but having the kids helping with the younger ones is also a good way for Isabella to be able to do the work alone. There's nearly 40 kids at her farm so it's a lot to deal with.

They mention the names of a few others but only once or twice.
Looking at their designs, I think there must be something like 20 recurring kids. The oldest children and those that have shown a bit of personality like the ":3" face kid and the two mischievous kids will probably survive.
I really doubt they'll be able to save the babies, it'll be hard enough for the various teams to deal with the slower kids.
