There's a decent number of successful MMA manga, formal, and informal.

Anime otaku don't watch MMA or combat sports in general. Also, martial arts is still relatively a niche interest.

Even when K-1 was huge and Pride was a big deal there wasn't like, any big anime to push for that. It's more likely that a manga/anime will push interest for a sport rather than the opposite.
